Schmitz Pits was born from a passion for great barbecue and a simple belief: if you're going to spend all night cooking a brisket, your smoker should be built to do the job right.

More than twenty years ago, what started as a hobby quickly became an obsession. Long nights tending fires and smoking briskets revealed the shortcomings of store-bought pits. They lacked the cooking capacity, consistency, and durability needed to produce truly exceptional barbecue—especially when feeding a crowd.

After moving to Texas, that passion turned into a pursuit. Rather than settling for what was available, we began building our own smokers. Through years of trial, error, and countless cooks, we refined every detail until we arrived at the design principles that define a Schmitz Pit today.
